If you use two basins of equal size, they might give your kitchen a better sense of style, but it would be difficult for you to wash pots and pans in either one of the basins and may have you drying those items outside of the sink. If you go with a three-basin sink, it potentially gives you room for a garbage disposal in between the two main basins, but also takes up more space, which you may not have available.
