The father and son team of Steven and Lucas Waxman are revved up and ready to join Hamilton’s food truck phenomenon.
Lucas, under the watchful and experienced eye of dad Steven, is set to roll out Waxy’s on Wheels by the end of February.
“We’re excited,” said Steven. “I wanted to do a food truck about six years ago, but everyone told me I was nuts, and look what has happened...”
Hamilton and area is home to a growing number of food trucks that offer up everything from pulled pork to funnel cakes, cupcakes and gourmet grilled cheese.
Waxy’s on Wheels is a former bread truck that once functioned in the warmer climes of Jacksonville, Fla. The truck was purchased in July of last year, then underwent a complete overhaul to make it self-sufficient and fully capable of serving up meals on wheels.
The interior of Waxy’s on Wheels features state-of-the-art equipment like huge meat slicers, a refrigerator, freezer, microwave, french fry cutter, griddle, barbecue, deep fryer, hand-wash station, exhaust fan and propane tank storage.
Steven, who will handle the day-to=day operation of the food truck, said Waxy’s on Wheels diners will enjoy smoked meat sandwiches, like corned beef, roast beef and turkey, along with tuna and egg for hungry vegetarians. As well, there will be daily specials featuring chicken, steak and ribs.
“I have always liked to cook and to be around food,” said the Dundas resident. “I just liked it and I had a knack for it. And I’m a people person, so I like to get out and kibitz with the public.”
The Waxman family once operated Waxy’s Delicatessen in Hamilton’s east end. The established was known for its delicious burgers, healthy salads and stacked high smoked-meat sandwiches.
The recipes for smoking the meat that Steven will serve at Waxy’s on Wheels are well-kept family secrets developed by his two uncles during decades in the food industry.
Once the Waxy’s on Wheels food truck gets a fresh new coat of red paint and is ready to hit the road, hungry Hamilton area diners will be able to follow its travels on Facebook and Twitter.
